Kale and Apple Sausage Pizza

This is one of those recipes passed on by a friend who got it from a friend's blog, etc. It was tasty and would be super easy to "improvise" depending on what ingredients you had in the fridge.

Kale and Apple Sausage Pizza

1 bunch kale, cleaned, coarsely chopped, and sauteed in olive oil
2 chicken and apple sausages, cut into thin rings
1/4 C chopped walnuts (or pecans...that's what I used, because that's what I had!)
2 C grated gouda
1 package pizza crust (I just use Trader Joe's, it's so convenient, and good...)

Preheat oven to 425. Roll out dough as thin as possible. Top with all other ingredients, and bake for 18 minutes.

Summer Vegetable Pizza

I managed to make it to the Farmer's Market for the first time this year yesterday afternoon. My roommates are out of town this weekend and so I decided that while I had the chance to experiment on my own, I'd pick up some fresh veggies to play with. One of the items I picked up was some eggplant. Now, I've cooked with eggplant before, but I've been pretty limited in preparation of them so far...in that I've only made them as eggplant parmesan. So, here's my first attempt at an alternative dish for eggplant!

Summer Vegetable Pizza

1 whole wheat pizza dough
1 small zucchini
1 small eggplant
3 small tomatoes
1/2 lemon
1 green onion
handful of basil
4 oz. goat cheese
olive oil
salt and pepper

Slice all of your veggies into thin rounds. Roll out pizza dough and put onto pan or pizza stone. Mix room temperature goat cheese with juice from the lemon, salt and pepper. Spread onto pizza dough. Sprinkle with slivers of basil. Spread rounds of vegetables in concentric circles. drizzle olive oil and sprinkle with green onions, salt and pepper. Bake in pre-heated oven at 450 for 10-15 minutes.

This is another of those pizza's where you could substitute whatever vegetables you have on hand and it will be great! The goat cheese, lemon and basil almost make it a little sweet, so the summer vegetables worked great with that combination!

Veggie Tortilla Pizza

I guess this would really fall more under a food "idea" than a recipe, but I thought I'd share it anyway! This is a quick lunch idea, I actually ate it with the beet salad I posted yesterday, although it doesn't really need a side dish as it has enough veggies on it already. If you need a quick pizza fix with little guilt, try this out.

Veggie Tortilla Pizza

1 whole wheat tortilla
3 tsp. pizza sauce (or you could just use tomato paste if that's what you have.)
sprinkle of onion powder
sprinkle of Italian seasoning
1 oz. mozzarella cheese, shredded
zucchini, sliced thin
green pepper, chopped
red onion, sliced thin
grape tomatoes, quartered

Preheat oven to 400. Place tortilla on a foil lined cooking sheet, or a pre-heated pizza stone if you have one, for 3-4 minutes, just enough to get it a little crispier. Remove from oven and spread pizza sauce on tortilla, sprinkle half the cheese and the onion powder and Italian seasoning. Top with all the veggies. Sprinkle remaining cheese on top and place back in oven for about 5-7 minutes, until veggies are cooked and cheese is melted.

You can use any veggies you want, this is just what we had in the refrigerator. You could also throw on some turkey pepperoni, or canadian bacon if you wanted to do a meat version. This is one of those great recipes to help you clean out your fridge!

Vegetable Pizza Duo

I'm not a huge pizza eater in general, but every once in a while I get a craving for pizza and I usually rotate between these two pizzas. For some reason I love veggie pizza more than others and they are so easy to make. The first one is a fairly traditional Veggie Pizza, but my favorite pizza to make is my Balsamic Veggie Pizza. It of course uses Gorgonzola, although I'm sure you could substitute other cheeses like feta or blue cheese, but I love Gorgonzola and it melds very nicely with the balsamic vinegar.

Traditional Veggie Pizza
makes 8 med. slices

Pizza Dough (you can use a pre-made dough, or homemade...I prefer to let Trader Joe's make it for me!)
Pizza sauce
Mozzarella cheese
Green and/or red peppers
Sliced olives (green or black)
Zucchini
Mushrooms
Red onion
Any vegetable that you want really...

Thinly chop all veggies so that they cook quickly and uniformly. Roll out pizza dough, cover with medium/thin coat of pizza sauce, sprinkle cheese over whole pizza and then top with whatever vegetables you like. Bake at 425 until dough is golden and the cheese is melted

I love to throw in veggies you don't normally get on a pizza from a Pizza Hut/Dominoes type place...like zucchini! Experiment with this pizza...it's easy to try new veggies this way too!

Balsamic Veggie Pizza
makes 8 med. slices

Pizza Dough (I still prefer to let Trader Joe's make it for me, and I opt for the Whole Wheat kind)
Gorgonzola cheese
Balsamic Vinegar
Green and/or red peppers
Zucchini
Mushrooms
Red onion
Artichoke Hearts
Grape tomatoes, halved
Garlic (opt.)
Fresh basil (opt.)

Roughly chop all the vegetables (I like to make this one a little more rustic with the rough chop on the vegetables), roll out pizza dough and cover with your vegetables and garlic. Sprinkle chunks of the cheese over the veggies and then drizzle with vinegar. Bake on a pizza stone per pizza dough package directions ( I think at 425) until dough is golden and the cheese is melted and nice and gooey. Top with fresh basil.
